Start cooking!

Rice is at the basis of any sushi roll.  That’s why it’s very important to learn how to properly cook sushi rice.  The rice should be sticky with a slightly sour taste. This is accomplished by flavouring the rice with sushi rice vinegar.

Chef Devaux has made a video on this subject, showing you how to cook sushi rice and prepare sushi rice vinegar. Just make sure you start with preparing the vinegar before cooking the rice.

Note: don’t use just rice vinegar to flavour the rice. The extra ingredients in sushi rice vinegar make all the difference. Without them, the flavour will be flat and not all as it’s supposed to taste.

Taste and stick it

How do you know if your sushi rice is good? Simple: taste it and spread it on a sheet of nori to find out if it sticks. How should it taste? In a sense, that’s a matter of taste. Experiment with different amounts of sushi rice vinegar. The most important thing is that you yourself are happy with the result. When in doubt, let others also taste your rice. Ask them to be honest in their opinion.

Be prepared

One more thing. It seems obvious, but just in case: before you start cooking, make sure you have all the requiered ingredients and utensils ready. After all: you don’t want to find out half way that something is missing!

And that completes your first lesson at Sushi University! All that’s left for you to do is practice, practice, practice and practice some more. Sushi rice is cheap, so don’t hold back and practice until you get it right.

Note: do make sure you buy sushi rice. There are all kinds of rice availabe, but for great sushi only sushi rice will do. Chef Devaux will tell you all about the various kinds of rice in another lesson.
