Sometimes, it’s the simplest things in life that create the most lasting impressions. And as much is true when it comes to food. A true Japanese delicacy, Grilled Unagi (eel) on a bed of rice is a simple, yet evocative dish, made all the more delicious by the addition of one simple ingredient – Unagi Sauce. Traditionally used as a seasoning or marinade for grilled Unagi, this Soy Sauce-based condiment is often compared to Barbecue Sauce due to its depth of flavor. Sweet and tangy, with delicious undertones of rice wine; Unagi Sauce is integral to truly memorable Unagi!

Popularized by Japanese chefs, Shirakiku Unagi Sauce is one of the few commercial varieties available that contain no MSGs or artificial flavors. Produced from Mirin (sweet rice wine), sugar and sauce, it has the distinctive flavor of home-made eel sauce, with a similar thickness that makes it ideal for broiling eel, and using as a marinade or condiment.

Prefer to make your own? Simply add ¼ of a cup of Mirin and 1 ½ tablespoons of sake to a pre-heated pan, then bring the contents to the boil.  Stir in  2 ½ tablespoons of sugar until fully dissolved, followed by the Soy Sauce. Bring the sauce to the boil once more, then allow it to simmer and thicken for 20 minutes prior to cooling. Once cooled, the sauce can be used immediately.
